Elyon (el'-lee-on) is an Americanized version of the old Hebrew word elyown. The Strong's Hebrew Dictionary says the following about the word:
"5945 'elyown el-yone'
from 5927; an elevation, i.e. (adj.) lofty (compar.); as
title, the Supreme:--(Most, on) high(-er, -est),
upper(-most)."

In the King James Bible, it is translated as "Most High" when used a title for God. Thus, Elyon is the Americanized version of an old Hebrew title for God.
